Upside Down Pineapple Cake has been one of my favorite cakes since when I was a kid. I always loved how pretty this cake is. It felt so fancy even though it is a very simple cake to make!
Easy Upside Down Pineapple Cake is a sweet and fluffy cake that is topped with caramelized pineapple slices and maraschino cherries. Another great thing about this recipe is that it is made with a boxed cake mix! This means you can cut your prep time in half.

Ingredients Needed for the Easiest Upside Down Pineapple Cake:
- Salted Butter (1/4 Cup)
- Light Brown Sugar (1/2 Cup)
- Pineapple Slices (20oz Can)
- Maraschino Cherries (10oz Jar)
- Yellow Cake Mix (1 Box)
- Eggs (3)
- Vegetable Oil (1/3 Cup)

- 9×13 Cake Pan or Baking Dish
- Baking Sheet
- Cooking Spray
- Paper Towels
- Large Mixing Bowl
- Hand Mixer or Stand Mixer

How to make the Easiest Upside Down Pineapple Cake:
1. Preheat oven to 350 degrees F, then lightly grease a 9×13 baking dish on the sides.
2. Add pineapple slices and cherries onto a paper-towel lined plate or surface.
3. Pour butter into 9×13 cake pan, then sprinkle brown sugar evenly over butter.
4. Arrange pineapples in a single layer on top of the butter mixture in the bottom of the pan, cut them if needed.
5. Place a whole maraschino cherry into each pineapple ring or piece.
6. Add cake mix, 1 cup pineapple juice, eggs, and oil to a large mixing bowl and beat on medium speed for 2-3 minutes or until well combined.
7. Gently pour cake batter over pineapple slices.
8. Bake for 43-44 minutes or until cake is baked through.
9. Remove from oven and allow to cool for 10 minutes.

10. Cover cake pan with baking sheet and flip cake onto pan, then serve.
