My family and I are big fans of cheese and vegetables so adding those two things together will be a hit in my house! Another thing to love about this recipe is how fast it is! You can have this dish ready in about 30 minutes! This is the perfect dish to make after a long day and you are tired of takeout!
This dish is vegetarian as the recipe is originally but if you are looking to add more protein, chopped chicken (cooked before) is a yummy twist. If you want to keep it vegetarian but still want more protein, we would recommend mushrooms. Chicken and mushrooms are both low in carbs.

Ingredients for Low Carb Broccoli Cheesy Casserole:
- Birds Eye Steamfresh Riced Cauliflower (or comparable)
- Steamed Broccoli Florets
- Heavy Cream or Half & Half
- Shredded Cheddar Cheese
- Butter
- Minced Garlic
- Salt & Pepper

How to make Low Carb Broccoli Cheesy Casserole:
1. Preheat the oven to 350 degrees.
2. Heat the riced cauliflower according to package directions.
3. Heat the butter in a small saucepan along with the garlic. Pour in the cream or Half & Half and bring to a boil.
4. Reduce the heat. Add in the shredded cheese and stir until melted.
5. Combine the riced cauliflower, cheese sauce, and broccoli florets. Add Salt and Pepper to taste.
6. Pour the casserole into an 8×8 baking dish.
7. Bake for 15-20 minutes or until heated through.
